Bronzewing Farm Mountain Pepper
Bronzewing Farmis a plantation producer of Tasmanian Mountain Pepper (or Pepper Berries; Tasmannia lanceolata) in the north-east of Tasmania. We do not source any Native Pepper from the wild. Our philosophy is to provide food and drink manufacturers, chefs, gourmet retailers and innovative home cooks with a consistent supply of high quality Mountain Pepper while enhancing the farm’s agricultural and native ecosystems.
Commercial production of select high ‘heat’ cultivars of Tasmanian Mountain Pepper (as both the exquisite freeze-dried pepperberries and the air-dried peppercorns) started in February 2011. Bronzewing Farm Tasmanian Mountain Pepper is consistently ‘hot’, day-in, day-out; year-in, year-out because our pepperberries are produced from our selected cultivars (propagated on the farm, planted on the farm and harvested from the farm). Compare this to peppers harvested from the bush, where you take pot luck on what sort of Tasmanian Mountain Pepper you’ll get.
Tasmanian Mountain Pepper (scientifically known as Tasmannia lanceolata) is native to Tasmania and is a very different plant from traditional pepper spice or capsicum-type bell-pepper, chilli or paprika. Black pepper spice comes from a flowering vine originating from India and Asia. Piperine provides the spicy heat in black pepper. Chilli, paprika and other capsicum fruits come from the Americas and the ‘heat’ comes from capsaicin. Tasmanian mountain pepper comes, oddly enough, from Tasmania (as well as some mountainous areas of southern Australia). The hot spicy flavour comes from polygodial.
